As I was browsing my blogs yesterday, I came across Two Peas and Their Pod’s post which informed me that this month is National Grilled Cheese Month, but even more, today is Grilled Cheese DAY! I had plans to run and then have dinner with Amber, and immediately passed on this information, hoping that she’d want to take part in Grilled Cheese Month, and an early celebration of the specific day. She of course was as excited as I, and we immediately decided that grilled cheese would be part of our supper!
While the Parmesan Crusted Pesto Grilled Cheese Sandwich on Two Peas and Their Pod’s blog looked absolutely divine, we decided to keep it a little more simple on our end. We made a homemade, whole-grain and oat, 3-ingredient flatbread and filled it with cheese. This was a delicious side to our fresh veggie salad and homemade honey-mustard vinaigrette dressing. This was such a light, yet satisfying post-run supper!
Amber and I often meet up on Wednesdays and Fridays to workout and then cook together. It is always fun to find and try out new healthy recipes together, and just have a couple evenings to hang out, visit, laugh, and pray together. We are both thankful that it is FINALLY warming up and drying off a bit so we can run outside now. Fresh air+a change of scenery+natural endorphins sure does a girl good! 🙂
I’m so thankful for our friendship, and always look forward to our weekly get-to-gethers! Although we now have less than 2 months left here in Russia, we’re grateful that we’ll be living relatively close to each other once we move back to the States, and are already scoping out places to meet up in the middle!
