Pizza #6: Colorado

After missing pizza night for various reasons the past four weeks, I’m ready to bring it back again, are you!?

GREAT!!!This week’s pizza comes from the beautiful state of Colorado.  It’s name: Mais.  This pizza is covered with a few different flavors stemming from corn, proscuitto cotto, and Crème fraîche.  Not only was I excited to have pizza again,  I was looking forward to experiencing the combination of the sweet, salty, and tangy flavors.

After reading the list of toppings, I was feeling pretty confident in the simplisity of it.  That is until I got to the Crème fraîche.  I was pretty clueless as to what that fancy named ingredient was, so I did a little research.  Come to find out, it simply means “Fresh Cream”.  And I found a recipe online to make it specifically.

Despite the amount of wait time this recipe involved, it was really pretty easy.  But I was curious the entire time of how it’d all turn out.  Here’s what you do to make Crème fraîche….(or atleast according to the recipe I followed).

Heat 1 cup of heavy whipping cream over low heat until it is 105 degrees F.

Pour heated whipping cream into bowl.

Add 1 Tablespoon of buttermilk. Stir.

Let set at room temperature, loosely covered by plastic wrap for about 24 hours.

After 24 hours, mixture should become thick, such as a mayonnaise consistency.

Stir mixture, and refrigerate for about 8 hours.

And that my friends, is one of our unique components to this Mais Pizza.  Now do you see why I was a little nervous!?!?!

Have no fear, it really wasn’t bad at all. In fact, it didn’t have much of a taste, but added a nice creaminess to the pizza as a whole.So….for our rendition of this pizza, we used our faithful pizza crust recipe.  We sprinkled on a thin layer of shredded cheese, and topped it with roasted sweet corn and prosciutto.  Before putting it in the oven, we added a light drizzle of Crème fraîche.

We have some friends in town for the weekend, so we decided to make a second pizza as well.  However, this one we kept basic with hamburger.Both pizzas turned out well, and were delicious.  The Colorado pizza was a hit among all.  It’s unique blend of salty prosciutto  semi-crunchy sweet corn, and creamy sauce produced a flavorful, but not over-the-top pizza, that hit the spot!   Nobody left hungry or unsatisfied, 🙂So there ya have it, Pizza Night has returned to our house. Mais Pizza

Homemade Pizza Crust

Toppings:

prosciutto

roasted sweet corn

Crème fraîche  —Heat 1 cup of heavy whipping cream over low heat until it is 105 degrees F. Pour heated whipping cream into bowl. Add 1 Tablespoon of buttermilk. Stir. Let set at room temperature, loosely covered by plastic wrap for about 24 hours. After 24 hours, mixture should become thick, such as a mayonnaise consistency. Stir mixture, and refrigerate for about 8 hours.

Bake at 450 degrees F for 15-20 minutes.
