Meatloaf

Last night, Tommy and I enjoyed a nice, quiet evening at home, and a nice comforting home-cooked meal.meWe both love to cook, making it fun to be in the kitchen and work together.  We each pick our own part of the meal to create and get started.  We’ve already decided that when we buy a house, a LARGE kitchen is TOP priority, 🙂

So last night on the menu we had meatloaf, brussel sprouts, and couscous.  These three foods are some of both our favorites, so the whole time we were cooking our excitement to eat grew.  Tommy took charge of the brussel sprouts, so he got to relax for a bit while I got the meatloaf mixed and in the oven.

Here’s what I used:

ingredientsI love making meatloaf because its so quick and easy to mix up.  The baking is the long part, but then it gives me plenty of time to get other things done.bowlSo after dumping everything in the bowl, it’s ready to get mixed together.  Some may choose to use a mixer or a wooden spoon. But I just use my hands.  Yes it’s messy, but it makes it more fun..I think!!mixOnce everything is combined, it’s ready to put in the dish and slide into the oven.prebakeAaaand our final product….platesCan you tells whose plate is whose??

We were both completely satisfied after this meal, and the best part: We have leftovers!! This means lunch today!!! Who doesn’t love left overs!
