Hubs takes his turn in the kitchen…

The other day while at school I received a text from my husband asking if I would make him some zucchini bread.  After I responded with a yes, but we’d need to get some zukes, he texted back to say “Actually never mind ..I wanna try and make some myself”.

Sure enough, I got home and there he was in the kitchen ready to set out on this task.  I helped him find his favorite recipe–his Gram’s Chocolate Zucchini Bread.  Then it was all him: shredding zucchini, measuring ingredients, and mixing away.  I offered to help a few times but he declined…that is, until it came to washing dishes 😉IMG_1728I must say, he did a pretty fantastic job for his first time of really baking.  He’s pretty stinkin’ incredible when it comes to cooking and grilling…anything involving meat, onion, garlic, olive oil, and a random selection of spices. Not to mention his pizza sauce we use almost every week, 😉 Despite the fact that he’d never really done much baking, he proved the other day to not be too shabby!

Thanks Gram for the cookbook! Can’t wait for Tommy to turn out some more delicious goodies from our kitchen, 🙂IMG_1729

Recipe

Gram’s Chocolate Zucchini Squash Bread

3 cups flour

1 1/2 tsp. baking powder

1 1/2 tsp. cinnamon

1 tsp. salt

1 tsp. baking soda

6 tablespoons cocoa

1 1/2 cup oil

2 1/3 cups brown sugar

4 eggs

3 cups grated zucchini

1  cup chocolate chips

1 cup chopped nuts (optional)

Sift together dry ingredients and set aside. beat oil, sugar and eggs until very light and fluffy. Add zucchini and beat. Add dry ingredients and mix well. Add chocolate chips and nuts. bake in loaf pans or muffin tines.

Bake at 350 degrees F for 45 minutes or until done when toothpick stuck in comes out clean.

Makes about 3 loaves.

  1. Good job, Thomas! I should have brought you all some frozen grated zuke, but didn’t even think of it. Of course, then he wouldn’t have gotten to use your nifty grater.
