Pizza #23: Mississippi

We dug into some major pizza last night.  And I was pleasantly surprised!

Now that I live here in the ‘south’ I hear all about Gumbo, but honestly don’t think I’ve ever had it.  Until last night…Our pizza of the week was a Gumbo Pizza.  Does that count as my first Gumbo experience??  Whether or not it does, I might be hooked!2013-06-14 18.10.34Mississippi’s Gumbo Pizza is built on a smoky roux sauce-covered crust, and topped with classic gumbo ingredients: shrimp, crab, andouille sausage, tomato, onion, and okra, and just a little bit of cheese.  They include a special file’ powder of ground dried sassafras leaves to their roux sauce.  We stuck with some Tony’s Creole seasoning, 🙂

After some of our past experiences with seafood toppings, I was a little hesitant of the crab and shrimp outcome.  But I was pleasantly surprised as there was very little seafood flavor as we devoured the pieces of pizza.  Instead, a nice spice took place from the creole-seasoned roux sauce and andouille sausage.2013-06-14 17.49.44I found an easy roux sauce recipe using just oil, flour, and then added the creole seasoning.  We used small salad shrimp, and sauteed the andouille sausage before topping it on the pizza.  After all the toppings were in place, we sprinkled a couple small handfuls of cheddar cheese on top-just enough to hold everything in place.2013-06-14 18.10.27I guess now I need to go experience some ‘real’ Gumbo and see how it compares. Hopefully it’s even better than the pizza!

Recipe

Gumbo Pizza

Crust:

Homemade Pizza Crust

Roux Sauce:

1/4 cup vegetable oil

1/3 cup flour

2 teaspoons Ton’y Creole Seasoning

Heat oil over medium heat, then add flour, stirring constantly.  Once flour is mixed in completely and not lumpy, sprinkle in creole seasoning.  Continue stirring continually and cooking over medium-low heat.  Mixture should be bubbling and turning brown.  

Toppings:

crab {we used a can of white crab meat}

shrimp {we used salad shrimp-thawed}

andouille sausage {cut into small slices and sauteed}

1/2 yellow onion, minced

okra, sliced

tomato, diced

cheese

Bake at 450 degrees F for 15-20 minutes until crust is golden brown.
